2km of morning jog...
I hope I can continue the habit and get back my fitness. It is a challenge to wake up early at 6am. (Ok fine, I got out of bed at 6.15 or so...) My mind and body is still half asleep but I am glad that I managed to complete it.
Read an article at Fitness First on "Training for a Half Marathon". It is quite a simple yet achievable steps/goals for me. At the end of the day, I may not be really training for half marathon, but I believe it will guide me to the right direction. I just wanted to shed some pounds and complete my 10km runs more at ease. Recent weight gain doesn't help me much! =x
Shall head to Fitness First later for a gym class. My first Body Step class. Hope I can enjoy! haha...

开心食验室 Food Laboratory: Tofu Cheesecake
When I was having my lunch at the Sun with Moon restaurant, I saw the, supposedly, famous Tofu Cheesecake. Hence I decided to google a little to see if I can grab hold of a simple recipe. I saw two recipe and decided to settle with this one. The only tough part is to get the toufu dry and smooth. Hope you enjoy as much as I do...
Non-bake Tofu Cheesecake
Base
Line and grease a 8" springform cake pan
100g Marie biscuits, crushed
80g Melted butter
Combine crushed biscuit crumbs and melted butter together in a mixing bowl. Press the biscuit crumbs onto the base of the prepared pan and chill in the refrigerator for later use.
Filling
300g Pressed Tofu (momen tofu)
15g Gelatine powder
70g Water
250g Cream cheese (room temperature)
200g Natural yogurt/sour cream
60g Soya milk (reduced sugar)/fresh milk
100g Icing sugar
1/2 tsp Vanilla extract
Method:
*Tip: This is a very important step to get a smooth and silky Tofu Cheesecake.

Method:
- Wrap tofu in cheesecloth and press out water from tofu by placing a heavy object on top for about 15 mins.
- Soak gelatine powder in water and leave aside for about 5 minutes.
- In a food processor, blend cream cheese, tofu, yogurt, soya milk, icing sugar and vanilla till very smooth*.
- Heat gelatine powder mixture in a double boiler till melted and add to cream cheese mixture and blend well.
- Pour the mixture into pan, till all the mixtures are used up and gently shake the pan a little.
- Chill cake in refrigerator for at least 4 hours or overnight.
- For perfect slices, cut cheesecake with a hot knife.
*Tip: This is a very important step to get a smooth and silky Tofu Cheesecake.

Never Gone...
It has been more than six years since the incident happens. Articles, records are being removed online and all the news we can find is via blog sites. Thank you, Romeo Tan for reposting the CNA article. Now I have also learned the importance of re-uploading the photos (still giving credits to the source) before the site or user took it down.
Through these years, we lived on. We continue to live and bracing our lives through thick and thin, wearing smiles wherever we can. But it is always during this period of the year that we realised, once again, he never left...
His smiles, his actions, his behaviours is deeply engraved in the memories of me, and I am sure many others too. I hope he is doing fine now, wherever he is. We will, on the day of his death anniversary, visit him again. He is still the pillar of EC0118. Thanks Jeremy. See you soon.
I was browsing through the blog site created in the memory of late Jeremy, wanting to take a look at the photos posted. Unfortunately, the photos are now dead link. I may log in to do some editing. (Hope his bro and him don't mind.) Here are some of the photos I gathered:
